Mauviel Copper Egg White Bowl with Ring


This 10.6-inch copper bowl is made for beating egg whites. Yep - just egg whites. Why? Copper material interacts with egg proteins to produce fluffy, high-rise whites if you use well - a copper egg bowl. It features a brass side ring that lets the chef in your hold or hang bowl.

I can verify using a copper bowl to whip egg whites does help to produce a better end product. A key to fluffy egg whites is a fine balloon whisk, an oil free bowl and strong wrists. Remember to remove any lacquer that may coat any new copper tools.
